Early on in our relationship, my fiancé made me realize that I had an obsession to sweet potatoes. I hadn’t even noticed that I was making them every day and ate them with nearly every meal. In my head, this was my good complex carb but I think had gone overboard. I cooked sweet potatoes so much, that he now don’t want to eat them. He says that he had enough sweet potatoes to last a life time. So I’m sad to report that he did not try this recipe. But who needs his taste buds!
My love for sweet potatoes started as a young girl. I absolutely loved my grandma’s sweet potato pies, so much, I would take one and hide it for myself. I was a greedy little kid, I know. This love started a life long fixation and now I’m on a mission to find as many food items that I can stick a sweet potato in.
Why not start with these pancakes which I absolutely love! They are by far my favorite type of pancake to make. Its everything you would want out of a sweet potato pie mixed up with a breakfast item. The best part is the recipe uses Bisquick. Therefore, these are going to be super easy and won’t require ingredients such as baking powder and baking soda!

- 1½ cup Bisquick
- 2 Eggs
- 1 Sweet Potato
- 1 cup of Milk
- 1 tbsp butter
- ¼ cup of Brown Sugar
- ½ tbsp Ground Cinnamon
- 1 tsp Nutmeg
- 1 tsp Vanilla Extract
- ½ Cup Chopped Walnuts
- 1 tbsp Butter
- ⅓ cup Granulated Sugar
- 1 tsp cinnamon
- Boil sweet potato in its skin for 30 minutes or until its soft. Then peel and mash the potato.
- In a large bowl, add peeled sweet potato.
- Whisk in two eggs
- Add brown sugar, vanilla, cinnamon and nutmeg.
- Stir until all ingredients are well combined.
- Heat stove to a medium heat and spray skillet with cooking spray
- Pour ¼ a cup of batter a each time or too your liking.
- Once the pancakes start bubbling, its time to flip.
- Add butter to heated skillet and allow to melt
- Pour in sugar, walnut and cinnamon
- Stir until ingredients are incorporated and mixture has browned. Be careful not to over cook.
- Take off stove quickly and place mixture on wax paper
