This summer social gatherings didn’t seem to cease! I’m been invited to barbecues and various celebrations. There has been a plethora of food all around me. With all the unhealthy eating that I’ve done this summer, I decided to make a Chicken and Waffle Caesar Salad as a transition to healthy ways. That’s right, this is my transition meal because I haven’t adapted the fully healthy way of living. Baby steps people!

Where Chicken and Waffles Meets Salads
Since, we were already discussed the ultimate comfort food in this post, I decided to stick with that theme and throw in another twist by adding it to a salad. The fried chicken in this salad is so flavorful and crispy, combines a range of spices to satisfy those taste buds. The waffles are oh so good, and guess what? You don’t have to make them from scratch. I’m letting out a super secret….they Eggo! Yes…eggo waffles because again, I wanted to make this recipe very easy for you. I used the mini eggo waffles for this recipe but the regular buttermilk or homestyle will do. This is not a recipe that you have to follow exactly. Where I used chicken breast tenderloins, you can just use a chicken breast and cut it into pieces. Although, this is a caesar salad recipe, you can try this out on another type of salad. The sky is the limit.

The Chicken and Waffle Salad Recipe
- 1 bag or 5 cups of Chopped Romain Lettuce
- ½ cup shaved parmesan cheese
- 1 box Frozen Mini Eggo Waffles
- 1 pkg of Chicken Tenderloins
- 1 cups Flour
- 1 tbsp Cajun Season
- 1 tbsp Garlic Powder
- ½ tbsp paprika
- ½ Cup Corn Starch
- 1 Egg
- ½ Cup Buttermilk
- 1½ cup Frying Oil
- ¼ tsp salt
- ½ tsp butter
- Caesar Salad Dressing
- For Waffles
- 2 tbsp melted butter
- 1 tsp garlic powder
- Dried parsly flakes (optional)
- 1 tsp Salt
- 1 tsp Crushed Black Pepper
- Start by cutting chicken into nugget size and place into a medium size bowl
- Mix in cajun seasoning, garlic powder, paprika and black pepper to chicken
- Stir until evenly coated with seasonings
- Add buttermilk to bowl and stir until mixed well
- Place one egg in bowl and continue to stir chicken
- In a separate bowl, add flour and cornstarch and mix evenly
- Move chicken to dry mix and stir until fully coated
- Heat frying pan and add oil on medium high heat
- Place chicken tenders in oil and fry on each side for approximately 2-3 minutes or until golden brown
- Once fried, remove chicken from oil and drain on rack or paper towels
- For Waffles
- Add mini waffles to a bowl and mix in all ingredients
- Arrange waffles on a cookie sheet and bake for 10 mins or until crispy.
- Assemble salad by adding lettuce, chicken, parmesan cheese and mini waffles. Sprinkle salt and pepper on the salad. Add caesar salad dressing on the salad or place on the side.
