Nothing says comfort food like a classic chicken and waffle dish! This savory dish has other chicken and waffle recipes beat. Here we put a twist on the classic recipe by adding some gravy with a cheddar biscuit! So I guess technically this dish is really a chicken and biscuit, but whose being technical? I don’t know many people who can turn down a Red Lobster cheddar bay biscuit and I definitely know that I can’t!
After spending time in Georgia, I quickly became acclimated to this delicious dish. In every four corners of the city of Atlanta, I could find a restaurant serving this right up. This has become my top ordered meal so I am proud to consider myself a Chicken and Waffle connoisseur. I’ve had some of the countries most well known Chicken and Waffle staples such as Cali’s Favorite, Roscoe’s Chicken and Waffles and Glady’s Knight Chicken and Waffles.
You’ll find this dish more savory rather than sweet as it trades in the syrup for a little bit of homemade gravy. You’ll fall in love. The chicken in this dish is crispy and OH SO FLAVORFUL! - For Fried Chicken
- 1LB Chicken Breast Tenderloins
- 1 tbsp Cajun Seasoning
- 1 tbsp Garlic Powder
- 1 tsp Black Pepper
- ¾ Cup Buttermilk
- 1 Egg
- 2 Cups Flour
- 1 Cup Cornstarch
- 1 tbsp Chicken Bouillon
- 1 tbsp hot sauce
- ¾ cup of frying oil
- For Waffles
- Red Lobster Cheddar Bay Biscuit Mix (Follow Box Instructions)
- For Gravy
- 1 tbsp butter
- ¼ cup flour
- ½ cup milk
- Black Pepper and Salt (to taste)
- ½ tbsp garlic powder
- 1 tbsp butter
- ¼ cup Chopped Green Onions (optional)
- Cropped Cooked Bacon (optional)
- Start by putting chicken into a medium size bowl
- Mix in cajun seasoning, garlic powder, paprika and black pepper to chicken
- Stir until evenly coated with seasonings
- Add buttermilk to bowl and hot sauce to bowl and stir until mixed well
- Place one egg in bowl and continue to stir chicken
- In a separate bowl, add flour, cornstarch and chicken bouillon until evenly mixed
- Move chicken to dry mix and stir until fully coated
- Heat frying pan and add oil on medium high heat
- Place chicken tenders in oil and fry on each side for approximately 2-3 minutes or until golden brown
- Once fried, remove chicken from oil and drain on rack or paper towels
- For Waffle
- Follow instructions on the box
- Spray waffle iron with cooking spray
- Place dough on iron and cook waffle until ready
- For Gravy
- Melt ½ tbsp of butter over a medium heat
- Shake flour in slowly while consistently stirring, the mixture should thicken and become a rouge.
- Pour in the milk and another ½ tbsp of butter in while continuously stirring.
- Let bubble and continue to stir until mixture is thick and smooth.
- Season gravy with black pepper, salt and garlic powder
- Garnish gravy with Chopped Green Onions and Bacon
- Plate it to your preference!
