This Italian baked meatball recipe is a great meal prep recipe for the whole family. The meatballs are flavorful and juicy, being baked and smothered with pasta sauce and cheese. This low carb baked meatball recipe will have family and friends asking for more.
I’m not really sure when my love for meatballs really begin. They weren’t a staple in my household growing up and my only memorable time having them were in college. My college roommate use to make them a lot and bring them to potlucks. That was the first time I realized that they could be considered a main dish. Her meatballs were nothing short of amazing, so maybe it was then that meatballs became a thing for me. Fast forward to present times, I’m always looking switch things up and I like to please my fiance who gets bored with eating the same things. We’re both on the keto diet and I am happy to announce that this is keto approved. This was a dish he and I really enjoyed and I hope you enjoy it the same!
Mixed All Ingredients for the Meatballs
You want to start by adding all the meatball ingredients to the to a bowl. Leaving behind shredded cheese and pasta sauce that is needed for the casserole. You can use your hands or a mixing spoon. Just make sure the ingredients are evenly distributed.
Once ingredients are properly mixed, pre-heat your over on a setting of 350 degrees. Form the mixed ingredients into meatballs with an ice cream scooper and place them into a greased casserole dish. Recipe makes about 18 balls. Pictured here are 12, I baked the rest on another day. I used a ceramic casserole dish which is outstanding at conducting and distributing heat well. If you’re in the market for new bakeware, I find this item to be durable and an excellent addition to my pots and pans.
Once you have your meatballs lined up in the casserole dish, place into the over for 30 minutes. Meatballs will baked into a golden brown and there will be grease left over. You can completely remove the meatballs from dish and remove the excess grease and replace the meatballs. Be sure to complete this step before adding pasta sauce and cheese.
Now is my favorite part because I am a cheese fanatic! Covering the dish with cheese and pasta sauce. I can’t emphasize enough how important it is to remove the excess grease before adding the cheese and pasta sauce. Once you have cover the meatballs with cheese and sauce, place in the over 8-10 minutes and broil for 3 additional mins.
Bon Appetit! This dish is great for the keto diet, its an awesome meal prep dish and a great family meal. If you enjoyed this recipe, you’ll also enjoy these:
