Keto Diet Update
I have been off to a good start with the keto diet. Surprisingly, it hasn’t been as challenging to keep up with but there has been days where I just wanted to eat a carb! That sounded rather polite, correction, there has been days wanted to devour a carb! Some days when the simpliest thing would complete my carb craving. Today, it was a grape! Never have I wanted the sweet nectar of a grape so badly. Oh the carbs! Their awesome! Sorry for that distraction, we’re not going to think about carbs anymore!
About The Sausage Cream Cheese Dip
We don’t have to (kinda) with this meal. This is a low carb meal that is perfect for the keto diet. Its so darn good, I actually felt guilty as I ate it, thinking to myself, am I really suppose to be eating this? Although, it is a low carb meal, you don’t want to scarf down the entire dish because it does contain some carbs and they can add up quickly.
This sausage cream cheese dip gives you the most rich, flavorful taste in each bit. The best part about this recipe is that it combines just three ingredients. You don’t even have you pull out any seasonings! It is that easy and quick! Its so good, its a good dip to make even if you weren’t following the keto diet.
So if you have some friends and family that are still skeptical about the keto diet, introduce them to this dip and then tell them its keto! They might give you a few surprised stares followed by questions of how its possible to eat this on the keto diet.
Now Lets Make It!
I love starting by showing you an image of the ingredients but I had a slight user error and was snapping pictures of the ingredients without an memory card in my camera!!! aargh! But that’s okay, I list out everything you need. Remember three ingredients! That’s it! You want to start by browning 16 ounces of breakfast sausage over medium heat. It really doesn’t matter which you use. Personally, I used Jimmy Dean Country Mild Sausage but if you wanted it more spicy you can use Jimmy Dean Hot. You can also try Sage and Italian or use a different brand.
Crumble the breakfast sausage as you’re cooking it. It will be more chunky if you neglect this step. I did the first time I made it and it felt like less of a dip due to large pieces of meat. Regardless, the taste will still be amazing.
Once your meat is browned, drain one 10 ounce can of diced tomatoes and add it to the skillet. I used Rotel Diced Tomatoes & Green Chilies. This is another opportunity to switch it up if you want. I don’t always prefer too much spice so sometimes I select the milder version. If you want to kick things up, go for the hot!
Mix the tomatoes together with the breakfast sausage and then add in your cream cheese! Which is the last ingredient! For the cream cheese you only need a 8 ounce package. If you want to make it creamer, you can add a little bit more but I would not use more than 11-12 ounces with this serving size.
Wait for the cream cheese to melt while consistently stirring! Now you have yourself some ready to serve Sausage Cream Cheese Dip! If you’re not following the keto diet or serving this dish to others that aren’t following the diet, feel free to serve with some chips. I have ate this dip alone and have added with to some roasted red peppers.
