A super easy cajun blacken chicken recipe that will impress your family and friends!

  1. Clean chicken and pat dry.
  2. Take 2 tablespoons of seasoning and coat top and bottom with blackening seasoning. Use roughly ½ a tablespoon for each piece of chicken.
  3. Heat up a cast iron skillet on high heat. This cast iron skillet is affordable and will last you a long time.
  4. Add a tablespoon of butter in the skillet and let melt.
  5. Place the chicken on the hot cast iron and let it cook for 5-6 minutes. Do not more the chicken so that it will have a blackened crust.
  6. Flip it and cook for another 5-6 minutes or until done.
  7. Remove from skillet and allow it to cool.
  8. Red Pepper Sauce
  9. Blend a jar of red peppers to a puree
  10. Using same skillet, turn to a medium heat
  11. Add a tablespoon of butter and minced garlic to heated skillet.
  12. Add puree to skillet and stir lightly until sauce is bubbling
  13. Stir in ½ tablespoon of butter and add heavy cream
  14. Add basil, salt and pepper
  15. Return chicken to sauce
